If you'd prefer a mod that makes vampirism more time intensive I'd suggest VT, probably because I'm a big fan of 90s RPGs. At first this can feel frustrating and limiting, but once you adjust it's a huge relief you can go do other stuff! You don't have to spend the aftermath of most fights tiresomely draining corpses, or be sure to leave one enemy alive to top off the ol' tank, you can just play Skyrim until it's time to feed. Not only is Sacrosanct as customizable as any of them, it does something which IMO is genius it limits the frequency with which you can feed to improve your vampiric "rank." Both BV and VT have a tendency to take over your game, BV with general neck or corpse biting, VT with diablerie (feeding on other vampires for those unfamiliar with 90s RPG lingo), while with Sacrosanct you'll spend 90% of your play time able to drain enemies only under very specific conditions. All three have pros and cons, though I'd be most likely to recommend Sacrosanct. I've played Better Vampires, Sacrosanct, and Vampiric Thirst.
